The taste of Kahramanmaraş tarhana is different from that of other tarhanas. A popular expression is, ‘’Wherever he goes in the world, the person from Maraş cannot give up their bulgur pilav and tarhana.’’ Tarhana is indispensable because it has a long shelf life. Maraş dishes are made delicious using tarhana. It is eaten as a snack or with meals during the winter months. In the summer months, firik (soft leathery tarhana) is eaten with walnuts and almonds. Tarhana soup is also made. Tarhana is high in vitamins. The demand for tarhana has increased in recent years, prompting the founding of many new companies operating in this field.
